Blueberries, Blueberries, Blueberries!

I had the opportunity to go blueberry picking with a friend on Thursday. Her brother has a very large blueberry patch and he gifted me a half gallon of sweet and tart berries.  I also harvested a few zucchini from my small garden.

So, yesterday I had a lot of fun in the kitchen preparing recipes I found on Pinterest.

Blueberry Zucchini Muffins

I made a dozen large muffins and put them in the freeze to be used next week when my son and his family are here visiting. I thought they would be a nice breakfast addition. You can find the recipe here.

Easy Blueberry Jam

It was really easy too! I didn't have chia seeds, so I used tapioca as the thickener. The recipe can be found here.

Lemon-Blueberry-Zucchini Bread

This too is in the freezer to be used next week; the aroma was heavenly while baking. It took a bit longer than the recipe said to bake (probably 10 minutes more). It is heavy like a pound cake. I am hoping it will be as delicious as I am anticipating. The recipe for the bread can also be found here
